Rule number one: fill your friends' cups instead of your own. It is the custom in Japan to serve each other when drinking. It is also considered polite to refill their glasses for them. If you see your host wanting to serve you more alcohol, you should then drain your glass and then have him serve you more. Before you start drinking, you should wait till everyone has been served. You then have a toast. You can say "kampai" as a salute.
